I lOvE egg salad — but I do NOT love the mayo that is added into most recipes. So – I decided to create one of my own. I wanted to add an avocado in place of the mayo, but we were out! 😉 I needed to improvise and here is what I threw” together……..and it was SO EASY to prepare and tasted delicious!!
This was for a single serving.
*2 hard boiled eggs
*White onion – 1/4 – diced
*Cucumber – 1/2 – peeled and diced
*Slice ‘n dice everything —- eggs, cucumbers, tomatoes and onion.
*Pour into bowl and slowly add the Dijon mustard and the balsamic to your taste.
**Add 1/4 of an avocado if you like!
**Add grilled chicken or ground turkey for some added protein!
