*Spaghetti Squash Carbonara* — SO Yum & Low Calorie

This recipe is SUPER delicious, healthy and LOW in calories! Also – 21 Day Fix Approved!

It is quickly becoming a staple in our house and want to share it’s deliciousness! Here’s the recipe:

1 spaghetti squash
1 lb. bacon (turkey)
1 yellow onion, chopped
4 gloves garlic, minced
1/2 c of peas
Parmesan cheese to taste
Red Pepper flakes or black pepper, to taste

Heat the oven to 400ºF. Cut the squash in half and pick out all the seeds. Don’t be anal about getting out the stringy stuff, you can’t even tell it’s there once the squash has roasted. Lightly coat the inside of the squash with some oil and place cut side down, on a baking sheet, in the oven for 20 minutes. Flip each half over, and roast for another 20 minutes–0r until the squash is easily shredded with a fork and add it to your serving bowl. Start heating up the peas.

While the squash is roasting, start the sauce. With the bacon placed horizontally on your cutting board, cut the strips into 1/2″ pieces. Don’t worry about separating the strips, just cut away. Add the bacon pieces to a saute pan that’s on medium heat. Cook the bacon until it’s browned and add to your serving bowl. Remove 3/4 of the bacon grease and reserve for another use. Place the onion and garlic in the pan and cook until translucent. Add them to your serving bowl. Add the peas into the mixture along with parmesan cheese and red pepper flakes to your liking. ENJOY! 🙂

I seriously underestimated this workout! Today was the first day of The 21 Day Fix, for me. I was up early, the house was quiet, coffee in hand (threw a load of laundry in the washing machine – using my time efficiently! LOL), and then I pressed play for Total Body Cardio! O!M!G! – My heart rate was high almost the whole time, I was definitely challenged and I LOVED it!!!! This workout seriously packs a punch! You CAN workout for only 30 minutes and still get a killer calorie burn! You just have to make the BEST use of your time ~ and Autumn certainly does that! Weighted cardio — okay? ‘Nuff said! It was awesome, quick and challenging! I was sweating and breathing heavy….that means it’s working—right? I’m excited for Day 2! Stay tuned….

The 21 Day Fix — The Food!

Now, how delicious is a juicy, fuji apple with some peanut butter? This is a perfect pre-workout snack to keep you full and full of energy for your workout and is “allowed” on The 21 Day Fix program! Pre-21 Fix days would consist of me yes, having the apple — but I would dip it into the peanut butter jar before each bite! Sound familiar? The Fix “diet” allows you to have 2 purple containers of fruit/day, depending on your specific caloric needs.  This was definitely an adjustment for me because I would snack on fruit all day long! Fruit is wonderful for you; however, it does contain a lot of sugar & best to eat in moderation.This plan focuses more on veggies, proteins, healthy fats, and carbs. Wine and sweets —> yes wine and sweets are included in the Fix, in moderation of course! A perfect snack idea would be hummus and sliced yellow peppers, a cucumber with almonds, etc. These will keep you fuller, longer. My caloric need is between 1200-1499 with this plan. This may differ for you, because it is based on current height and weight.

I have yet to begin the workouts, and will start next Monday. From what I have been seeing/hearing from my Challengers, they are feeling great, energized, strong and are not starving! This, I believe, is a fear of many. You will not starve on this plan! It is designed for you to learn how to eat in order for your body to be fueled correctly & efficiently.

The 21 Day Fix!! What’s All the Hype??

As you may have heard, seen or read, Beachbody has a brand new product called The 21 day Fix. What is it you ask, well….you have come to the right spot! I will be writing about my “journey” with The Fix (as I like to call it) –> highs, lows, common questions, and how to absolutely CRUSH the program and SEE results! The test group exhibited crazy results, in the short 21 days. This program is In such high demand that it sold out in ONE DAY!! This product sold so fast, that if you wanted to order it, you will have to wait to receive it until March! Craziness! ….BUT a good kinda crazy!

So, what is this program all about?? Well….first and foremost, it has been created by a mommy- who knows, firsthand, how difficult it can be to carve out any time for yourself, let alone find the time to work out! Autumn Calebrese is a celebrity fitness trainer & a bikini fitness competitor (who better to get you in shape…? LOL) who is also a mother. She designed this fitness AND nutrition program to be an easy and seamless transition into getting fit, healthy and on your way to a NEW and IMPROVED you! Here’s the breakdown:

**EASY meal planning —-> NO counting calories, NO weighing, NO measuring, NO counting points, carbs……

The plan comes with color coded containers that are for specific food groups and you are allowed only so many per day.


**EFFECTIVE & FAST Workouts —–> MAJOR calorie burn in 30 minutes/day! Thirty minutes?? YES —- 30 minutes!! You can spare that for yourself, you are WORTH IT!  Here’s the breakdown of the workouts:

  1. Upper Fix.Targeted resistance training helps shape your chest, back, shoulders, arms, and abs.
  2. Lower Fix. Firm and tone your entire lower body while you blast fat and burn calories.

The 21 Day Fix!!!!

I am SOOOO excited to start the 21 Day Fix on Monday! I am really looking forward to a CHANGE in both my diet and also my fitness routine. The plan is so easy to follow and is promising amazing results. I am just excited to see how my body changes my adding more protein to my diet, as well as changing my workouts. The workouts are different each day – which I NEED and only 30 minutes….which is amazing for this mommy! The nutrition component is EASY to follow and keeps you full all day. Wine and chocolate are included —-> YAY! 🙂 Here’s to the next 21 Days!

Once you make the decision to incorporate clean eating and exercise into your life, you will immediately begin to feel better! It takes time, however, for you and for others to actually see the results. They WILL come with persistence, effort, and consistency. 1 avo­cado
1 tomato, diced
1/2 can of Ocean Nat­u­rals tuna
chopped cilantro to taste
a squeeze of lime juice
gar­lic pow­der to taste
*optional — just a bit of shred­ded pep­per jack cheese

Dice everything up and mix together! Enjoy!!
